A quick and comforting buffalo chicken pasta bake, perfect for weeknight dinners, with creamy cheese and tender chicken.

Ingredients

  • 8 oz penne pasta
  • 2 cups cooked shredded chicken (rotisserie works well)
  • 1 cup buffalo sauce
  • 1 cup cream cheese
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup ranch dressing
  • 1/4 cup chopped green onions (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook the penne pasta according to package instructions until al dente; drain and set aside.
  3. Combine shredded chicken, buffalo sauce, cream cheese, ranch dressing, and half of both the cheddar and mozzarella cheeses in a large mixing bowl. Mix thoroughly.
  4. Stir in the cooked pasta until evenly coated with the mixture.
  5. Transfer to a greased 9×13 inch baking dish and spread evenly.
  6. Top with remaining cheddar and mozzarella cheeses.
  7. Bake for approximately 20 minutes or until cheese is bubbly and golden brown.
  8. Let cool for a few minutes before serving; garnish with chopped green onions if desired.

Notes

Use rotisserie chicken to save time. Feel free to adjust the buffalo sauce amount for your spice preference. Great for leftovers!
