- 4 eggs
- 2 cups crispy potatoes, diced
- 6 slices smoky bacon, chopped
- Salt and pepper to taste
- Optional toppings: cheese, green onions
Instructions
- Preheat the air fryer to 380°F (193°C).
- Mix the diced crispy potatoes with salt and pepper in a bowl.
- Place the potatoes in the air fryer basket and cook for about 10 minutes or until golden brown.
- Cook the chopped bacon in a skillet until crispy, then drain the excess fat.
- Lower the air fryer temperature to 350°F (175°C).
- Crack the eggs over the crispy potatoes and sprinkle the cooked bacon on top.
- Cook in the air fryer for another 5-7 minutes, or until the eggs are cooked to your liking.
- Serve hot, topped with cheese and green onions if desired.
Notes
Great with toast or can be customized with vegetables. Store leftovers in an airtight container.
