A quick and tasty breakfast combining crispy potatoes, smoky bacon, and perfectly cooked eggs, all made in the air fryer.

Ingredients

  • 4 eggs
  • 2 cups crispy potatoes, diced
  • 6 slices smoky bacon, chopped
  • Salt and pepper to taste
  • Optional toppings: cheese, green onions

Instructions

  1. Preheat the air fryer to 380°F (193°C).
  2. Mix the diced crispy potatoes with salt and pepper in a bowl.
  3. Place the potatoes in the air fryer basket and cook for about 10 minutes or until golden brown.
  4. Cook the chopped bacon in a skillet until crispy, then drain the excess fat.
  5. Lower the air fryer temperature to 350°F (175°C).
  6. Crack the eggs over the crispy potatoes and sprinkle the cooked bacon on top.
  7. Cook in the air fryer for another 5-7 minutes, or until the eggs are cooked to your liking.
  8. Serve hot, topped with cheese and green onions if desired.

Notes

Great with toast or can be customized with vegetables. Store leftovers in an airtight container.
