A quick and simple dish that combines garlic and olive oil for a comforting and energizing meal.

Ingredients

  • 12 ounces spaghetti
  • 6 cloves garlic, thinly sliced
  • ¼ cup extra virgin olive oil
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • ¼ tsp red pepper flakes
  • ¼ cup reserved pasta water
  • 2 tbsp chopped parsley

Instructions

  1. Boil spaghetti in salted water until slightly firm.
  2. In a skillet, heat the olive oil over medium heat and cook the sliced garlic until it is pale golden and fragrant.
  3. Add the red pepper flakes and black pepper to warm the oil and stir for a minute.
  4. Drain the pasta, reserving ¼ cup of the pasta water, and transfer the spaghetti to the skillet with the flavored oil.
  5. Toss the pasta until it is glossy, adding some reserved pasta water if needed to help coat the spaghetti.
  6. Finish with chopped parsley and serve hot.

Notes

Be careful not to burn the garlic. Adjust red pepper flakes to your taste. Use high-quality olive oil.
