- 2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup buttermilk
- 2 cups peeled and diced apples
- 1/2 cup brown sugar
- 1/2 cup rolled oats
- 1/4 cup all-purpose flour (for streusel)
- 1/2 teaspoon ground cinnamon (for streusel)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
- In a large bowl, whisk together 2 cups of flour, baking powder, baking soda, salt, and 1 teaspoon of cinnamon.
- In another bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the eggs one at a time, then stir in the vanilla extract.
- Alternately add the flour mixture and buttermilk to the butter mixture, beginning and ending with the flour. Gently fold in the apples.
- Pour the batter into the prepared pan.
- In a small bowl, mix the brown sugar, oats, 1/4 cup flour, and 1/2 teaspoon cinnamon to create the streusel topping. Sprinkle it evenly over the cake batter.
- Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
- Let it cool before slicing and serving.
Notes
For added flavor, mix sweet and tart apples. Store in an airtight container for up to 3 days.
