- 2–3 lbs chuck roast
- 1 cup soy sauce
- 1/2 cup brown sugar
- 1/4 cup rice vinegar
- 3 cloves garlic, minced
- 1 tablespoon grated ginger
- 1 tablespoon sesame oil
- 1 tablespoon cornstarch
- 1/4 cup water
- Salt and pepper to taste
- Green onions for garnish
Instructions
- Season the chuck roast with salt and pepper.
- Mix together soy sauce, brown sugar, rice vinegar, garlic, ginger, and sesame oil in a bowl.
- Place the roast in a slow cooker and pour the sauce over it.
- Cook on low for 360-480 minutes or until tender.
- Remove the roast and let it rest.
- Strain the sauce and pour it into a saucepan.
- Mix cornstarch and water, then stir into the sauce.
- Bring to a boil, then reduce to a simmer until thickened.
- Slice the roast and serve with the sauce, garnished with green onions.
Notes
Marinate the chuck roast in the sauce for a few hours or overnight for richer flavor. Customize with your favorite vegetables for added nutrition.
