- 1.5 pounds boneless skinless chicken breasts, cut into 1.5 inch cubes
- 12 slices thick cut bacon, halved
- 2 tablespoons olive oil
- 2 tablespoons brown sugar
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 0.5 teaspoon onion powder
- 0.75 teaspoon kosher salt
- 0.5 teaspoon black pepper
- 0.25 teaspoon cayenne pepper
- 1 tablespoon Dijon mustard
Instructions
- Toss the chicken cubes with the olive oil in a bowl.
- In a separate bowl, mix the brown sugar, smoked paprika, garlic powder, onion powder, kosher salt, black pepper, and cayenne pepper.
- Coat the chicken evenly with the spice mix.
- Preheat the oven to 400 degrees Fahrenheit.
- Brush the chicken lightly with Dijon mustard.
- Wrap each piece of chicken with half a slice of bacon and secure it with toothpicks.
- Arrange the wrapped chicken on a baking sheet lined with a rack.
- Bake for about 20 minutes, then turn the chicken and bake for another 10 to 15 minutes until the bacon is browned and the chicken reaches 165 degrees Fahrenheit.
- For an extra crispy finish, broil for 2 to 3 minutes.
- Rest the bites for 5 minutes before serving.
Notes
Use thick-cut bacon for better texture. You can also try different meats or marinades for variations.
