  • 12 Medjool dates
  • 6 slices thick-cut bacon
  • 4 oz soft goat cheese
  • 2 tbsp honey
  • Black pepper (to taste)
  • Fresh rosemary or thyme (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Make a small slit in each date to create a pocket, remove the pit, and stuff with goat cheese.
  3. Cut bacon strips in half and wrap each date with a piece of bacon, securing with a toothpick if needed.
  4. Place wrapped dates on a baking sheet lined with parchment paper and bake for 20-25 minutes, until bacon is golden and crisp.
  5. Drizzle honey over the hot dates once out of the oven.
  6. Let cool for a few minutes before serving warm, garnished with black pepper or herbs.
