Delightful Banana Bread Cookies combining the flavors of traditional banana bread with chocolate chips.

Ingredients

  • 2 ripe bananas
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mash the ripe bananas in a large bowl until smooth.
  3. Add the softened butter, brown sugar, and granulated sugar to the bananas and mix well until fully combined.
  4. Beat in the egg and vanilla extract until the mixture is smooth.
  5. In another bowl, whisk together the flour, baking soda, and salt.
  6. Gradually add the dry ingredients into the banana mixture and fold until just combined.
  7. Gently fold in the chocolate chips.
  8. Scoop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  9. Bake for 10–12 minutes or until the edges are golden and the centers look set.
  10. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

Best enjoyed warm, right out of the oven. Can be served plain, with cold milk, or with a scoop of vanilla ice cream.
