Ingredients

  • 2 lbs chicken breasts or thighs
  • 1 cup BBQ sauce
  • ¼ cup honey
  • 1 tbsp apple cider vinegar
  • 1 tsp smoked paprika
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ¼ tsp chili flakes
  • Salt and pepper to taste
  • 3 cups cooked rice
  • 1 cup corn
  • ½ cup shredded cheese
  • Crispy onions, for topping

Instructions

  1. Mix the BBQ sauce, honey, apple cider vinegar, smoked paprika, garlic powder, onion powder, chili flakes, salt, and pepper in a bowl.
  2. Pour half of the sauce mixture into a slow cooker.
  3. Place the chicken in the slow cooker and top it with the remaining sauce.
  4. Cook the chicken on low for 360 minutes or on high for 180 to 240 minutes until it is tender.
  5. Shred the chicken after cooking and stir it back into the sauce.
  6. Serve the BBQ chicken over cooked rice, adding corn, cheese, and crispy onions on top.

Notes

Use bone-in chicken thighs for extra flavor or opt for chicken breasts for a leaner choice. Adjust sauce and toppings to suit your taste.
