- 4 large tortillas
- 1 cup salsa (optional)
- 1 cup cooked rice (optional)
- 1 avocado, sliced (optional)
- 1/2 cup sour cream (optional)
- Seasonings (salt, pepper, cumin, chili powder to taste)
Instructions
- In a skillet over medium heat, cook the ground beef until browned; drain excess fat.
- Stir in the black beans and seasonings, cooking until heated through.
- Warm the tortillas in a separate pan or microwave.
- Place a portion of the beef and bean mixture on each tortilla, top with cheese and any optional ingredients (salsa, rice, avocado, sour cream).
- Roll up the tortillas tightly, folding in the sides to secure the filling.
- Serve warm.
Notes
Use lean ground beef for a healthier option. Feel free to add your favorite vegetables, like bell peppers or onions, to the beef mixture. For a vegetarian option, replace the beef with more beans or lentils.
