- 4 medium zucchinis
- 1 pound ground beef
- 1 cup diced tomatoes
- 1/2 cup diced onion
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 cup shredded cheese (optional)
- Olive oil for drizzling
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the zucchinis in half lengthwise and scoop out the center to create boats.
- In a skillet, heat olive oil over medium heat and add the onion and garlic, sautéing until soft.
- Add the ground beef, cooking until browned. Stir in diced tomatoes, Italian seasoning, salt, and pepper.
- Fill each zucchini boat with the beef mixture and top with cheese if desired.
- Place the boats in a baking dish and drizzle with olive oil.
- Bake for 25-30 minutes until the zucchinis are tender.
- Serve warm.
Notes
Make sure to scoop out enough of the zucchini flesh to create ample space for the beef filling. You can add other vegetables like bell peppers or mushrooms for extra flavor.
