- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add diced onion, garlic, carrots, and celery. Sauté until softened, about 5 minutes.
- Cook ground beef or sausage until browned.
- Stir in diced tomatoes, cannellini beans, beef broth, and Italian seasoning. Bring to a boil.
- Add pasta and reduce heat. Simmer until pasta is cooked, about 8-10 minutes.
- Season with salt and pepper to taste.
- Serve hot garnished with fresh parsley and crusty bread.
Notes
Feel free to use any ground meat; for a vegetarian option, substitute meat with mushrooms or more beans. Adjust broth according to preferred consistency.
