  • 2 cups Fresh or Frozen Blackberries
  • 0.5 cups Granulated Sugar (for blackberry mixture)
  • 2 tablespoons Cornstarch
  • 1 tablespoon Lemon Juice
  • 2 cups Heavy Whipping Cream
  • 0.25 cups Powdered Sugar
  • Fresh Blackberries (for decoration)
  • Edible Flowers
  • Dark Chocolate Shavings
  • Cocoa Dusting

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a large bowl, mix the flour, granulated sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add the eggs, vegetable oil, buttermilk, and vanilla. Mix until smooth.
  4. Slowly stir in the hot water until the batter is thin. Pour the batter evenly into the prepared pans.
  5. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean. Let cool.
  6. In a saucepan, combine the blackberries, granulated sugar, cornstarch, and lemon juice. Cook over medium heat until the mixture thickens. Let it cool.
  7. In a mixing bowl, whip the heavy cream and powdered sugar until soft peaks form.
  8. Once the cakes are cooled, remove them from the pans. Place one layer on a serving plate. Spread the blackberry filling over the top, then add the second layer.
  9. Cover the top and sides of the cake with the whipped cream. Decorate with fresh blackberries, edible flowers, dark chocolate shavings, and a dusting of cocoa.

Notes

For a richer flavor, use high-quality cocoa powder and ensure all ingredients are at room temperature before starting.
