Ingredients

  • 1 lb chicken breast
  • 1 lb cheese tortellini
  • 4 tbsp olive oil
  • 4 cups romaine lettuce
  • 1 cup Caesar dressing
  • 0.5 cup Parmesan cheese
  • 1 cup cherry tomatoes
  • 0.25 cup croutons
  • Salt and pepper (to taste)
  • Lemon wedges

Instructions

  1. Season the chicken breast with salt and pepper. Heat 2 tablespoons of olive oil on the Blackstone griddle over medium heat. Cook the chicken for about 6-7 minutes on each side or until fully cooked. Remove from heat and let it rest before slicing.
  2. Cook the tortellini in boiling salted water according to package instructions. Once cooked, drain and toss with 2 tablespoons of olive oil to prevent sticking.
  3. Combine the sliced chicken, cooked tortellini, romaine lettuce, Caesar dressing, cherry tomatoes, and Parmesan cheese in a large bowl. Toss everything together until well mixed. Top with croutons and serve with lemon wedges.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or skillet.
