- 1 lb chicken breast
- 1 lb cheese tortellini
- 4 tbsp olive oil
- 4 cups romaine lettuce
- 1 cup Caesar dressing
- 0.5 cup Parmesan cheese
- 1 cup cherry tomatoes
- 0.25 cup croutons
- Salt and pepper (to taste)
- Lemon wedges
Instructions
- Season the chicken breast with salt and pepper. Heat 2 tablespoons of olive oil on the Blackstone griddle over medium heat. Cook the chicken for about 6-7 minutes on each side or until fully cooked. Remove from heat and let it rest before slicing.
- Cook the tortellini in boiling salted water according to package instructions. Once cooked, drain and toss with 2 tablespoons of olive oil to prevent sticking.
- Combine the sliced chicken, cooked tortellini, romaine lettuce, Caesar dressing, cherry tomatoes, and Parmesan cheese in a large bowl. Toss everything together until well mixed. Top with croutons and serve with lemon wedges.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or skillet.
