Delicious and easy chicken fajita quesadillas made on a Blackstone griddle, filled with seasoned chicken, colorful bell peppers, and melted cheese.

Ingredients

  • 1.5 lb chicken breast (sliced thin)
  • 2 bell peppers (sliced)
  • 1 onion (sliced)
  • 3 tbsp oil
  • 2 tbsp fajita seasoning (use half for chicken, half for peppers/onions)
  • 8 flour tortillas (large)
  • 3 cups shredded cheese (cheddar and Monterey Jack)
  • 0.5 cup sour cream (for serving)
  • 0.5 cup salsa (for serving)
  • 0.25 cup guacamole (for serving)
  • 4 lime wedges (for serving)

Instructions

  1. Heat the Blackstone griddle to medium-high. Add 2 tablespoons of oil.
  2. Add the sliced chicken to the griddle. Sprinkle half of the fajita seasoning over the chicken.
  3. Cook the chicken for about 5-7 minutes until done. Remove and set aside.
  4. Add the remaining oil to the griddle. Add the sliced bell peppers and onions. Sprinkle the rest of the fajita seasoning over them.
  5. Cook the vegetables for about 5 minutes until they are soft.
  6. Return the chicken to the griddle and mix with the cooked peppers and onions.
  7. Take a large flour tortilla and add a portion of the chicken and veggie mixture. Top with shredded cheese.
  8. Fold the tortilla in half and place it on the griddle. Cook for about 3 minutes on each side until golden and the cheese melts.
  9. Repeat the process for the remaining tortillas and filling.

Notes

Serve hot with sour cream, salsa, guacamole, and lime wedges. Great for parties or family meals.
