- 1.5 lb chicken breast (sliced thin)
- 2 bell peppers (sliced)
- 1 onion (sliced)
- 3 tbsp oil
- 2 tbsp fajita seasoning (use half for chicken, half for peppers/onions)
- 8 flour tortillas (large)
- 3 cups shredded cheese (cheddar and Monterey Jack)
- 0.5 cup sour cream (for serving)
- 0.5 cup salsa (for serving)
- 0.25 cup guacamole (for serving)
- 4 lime wedges (for serving)
Instructions
- Heat the Blackstone griddle to medium-high. Add 2 tablespoons of oil.
- Add the sliced chicken to the griddle. Sprinkle half of the fajita seasoning over the chicken.
- Cook the chicken for about 5-7 minutes until done. Remove and set aside.
- Add the remaining oil to the griddle. Add the sliced bell peppers and onions. Sprinkle the rest of the fajita seasoning over them.
- Cook the vegetables for about 5 minutes until they are soft.
- Return the chicken to the griddle and mix with the cooked peppers and onions.
- Take a large flour tortilla and add a portion of the chicken and veggie mixture. Top with shredded cheese.
- Fold the tortilla in half and place it on the griddle. Cook for about 3 minutes on each side until golden and the cheese melts.
- Repeat the process for the remaining tortillas and filling.
Notes
Serve hot with sour cream, salsa, guacamole, and lime wedges. Great for parties or family meals.
