- 1 cup active sourdough starter (fed 4–6 hours prior)
- 1 ½ cups warm filtered water (90°F)
- 4 cups bread flour, plus ¼ cup extra for dusting
- 2 tsp fine sea salt
- 1 tbsp freshly grated lemon zest (from 2 large lemons)
- 1 ½ cups frozen wild blueberries (unthawed)
- 2 tbsp rolled oats, for topping
- 1 tsp lemon juice, optional
Instructions
- Combine the active sourdough starter and warm water in a large bowl. Stir in the 4 cups of bread flour until no dry flour remains. Cover the mixture and let it autolyse for 30 minutes at a temperature of 68-72°F.
- After 30 minutes, sprinkle salt and lemon zest (plus optional lemon juice) over the dough. Perform 4 stretch and folds, cover the bowl, and let the dough rest for another 30 minutes.
- Repeat the stretch and fold process three more times, spaced 30 minutes apart. After the last set, allow the dough to rise for 1 hour until it is 50% larger and appears bubbly.
- Turn the dough out onto a floured surface and pat it into a rectangle. Top the dough with frozen blueberries, then fold it to encase the fruit. Pre-shape the dough into a ball and let it rest for 15 minutes, covered.
- Shape the dough into a tight boule and place it seam side up in a floured proofing basket. Cover the dough and let it cold ferment in the fridge for 12-14 hours.
- Preheat your oven to 450°F with a 5-7 quart Dutch oven and its lid inside for 30 minutes. After preheating, tip the dough into the hot Dutch oven seam side down.
- Score the top of the loaf with a 4-inch slash, sprinkle with rolled oats, cover, and bake at 450°F for 30 minutes.
- Remove the lid, reduce the oven temperature to 425°F, and bake for an additional 20-25 minutes until the bread is deep golden brown and the bottom sounds hollow when tapped.
- Transfer the loaf to a wire rack and let it cool completely for 2 hours before slicing.
Notes
Serve plain or with butter or cream cheese. It can also be enjoyed toasted with honey.
