  • 12 oz penne or rotini pasta
  • 1 cup diced bell peppers
  • 1/2 cup diced onion
  • 1 cup heavy cream
  • 1 cup grated cheddar cheese
  • 2 cups chicken broth
  • 1 packet ranch dressing mix
  • 1 tbsp Cajun seasoning
  • Olive oil, salt, and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Sauté diced onion and bell peppers until softened (about 5 minutes).
  3. Add shredded chicken, ranch dressing mix, and Cajun seasoning; mix well.
  4. Pour in chicken broth and bring to a boil.
  5. Stir in uncooked pasta and heavy cream; reduce heat to low and simmer for 10-12 minutes until the pasta is cooked through.
  6. Mix in grated cheddar cheese until melted.
  7. Serve warm, garnished with fresh parsley if desired.
