- 1 lb cooked chicken (shredded or diced)
- 12 oz penne or rotini pasta
- 1 cup diced bell peppers
- 1/2 cup diced onion
- 1 cup heavy cream
- 1 cup grated cheddar cheese
- 2 cups chicken broth
- 1 packet ranch dressing mix
- 1 tbsp Cajun seasoning
- Olive oil, salt, and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Sauté diced onion and bell peppers until softened (about 5 minutes).
- Add shredded chicken, ranch dressing mix, and Cajun seasoning; mix well.
- Pour in chicken broth and bring to a boil.
- Stir in uncooked pasta and heavy cream; reduce heat to low and simmer for 10-12 minutes until the pasta is cooked through.
- Mix in grated cheddar cheese until melted.
- Serve warm, garnished with fresh parsley if desired.
Notes
For added spice, consider adding a few dashes of hot sauce or extra Cajun seasoning.
