Ingredients

  • 4 Atlantic cod fillets
  • 1 cup tomato sauce
  • 1 onion, chopped
  • 1 tablespoon herbs (such as thyme and oregano)
  • 2 tablespoons butter
  • 1 cup breadcrumbs
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • 1/4 cup white wine
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Sauté onions and garlic in butter until soft.
  3. Add tomato sauce, white wine, herbs, salt, and pepper, and simmer for 5 minutes.
  4. Place the cod fillets in a baking dish and pour the sauce over them.
  5. Mix breadcrumbs with melted butter and sprinkle over the cod.
  6. Bake for 20-25 minutes until the fish is flaky and the crust is golden.
  7. Serve with lemon juice and garnish with fresh parsley.

Notes
