- 4 Atlantic cod fillets
- 1 cup tomato sauce
- 1 onion, chopped
- 1 tablespoon herbs (such as thyme and oregano)
- 2 tablespoons butter
- 1 cup breadcrumbs
- 2 tablespoons lemon juice
- 2 cloves garlic, minced
- 1 tablespoon fresh parsley, chopped
- 1/4 cup white wine
- 1 teaspoon salt
- 1/2 teaspoon pepper
Instructions
- Preheat the oven to 375°F (190°C).
- Sauté onions and garlic in butter until soft.
- Add tomato sauce, white wine, herbs, salt, and pepper, and simmer for 5 minutes.
- Place the cod fillets in a baking dish and pour the sauce over them.
- Mix breadcrumbs with melted butter and sprinkle over the cod.
- Bake for 20-25 minutes until the fish is flaky and the crust is golden.
- Serve with lemon juice and garnish with fresh parsley.
Notes
For additional flavor, add red pepper flakes or customize the dish with olives or capers.
