- 1 lb ground beef
- 1 small head of cabbage, chopped
- 1 can diced tomatoes (14.5 oz)
- 1 packet taco seasoning
- 1 cup shredded cheese (cheddar or Mexican blend)
- Salt and pepper to taste

Instructions
- Heat a bit of olive oil over medium heat in a large skillet.
- Add the ground beef and cook until browned, breaking it up with a spoon.
- Drain excess fat if necessary.
- Stir in the taco seasoning and diced tomatoes (with juice) and mix well.
- Add the chopped cabbage to the skillet and mix until combined.
- Cook for an additional 5-7 minutes, or until the cabbage is tender.
- Sprinkle the shredded cheese on top and cover until melted.
- Serve warm and enjoy your meal!

Serve with toppings like sour cream, cilantro, avocado, or jalapeños. Can be paired with chips or rice for a heartier meal.
