Ingredients

  • 1 lb cooked chicken, shredded or diced
  • 12 oz penne or rotini pasta
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 2 tbsp Cajun seasoning
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 3 cloves garlic, minced
  • 1 tbsp olive oil or butter

Instructions

  1. Heat the olive oil or butter in a large pot over medium heat. Add the minced garlic and cook until fragrant.
  2. Stir in the cooked chicken, Cajun seasoning, salt, and pepper; cook until heated through.
  3. Pour in the chicken broth, heavy cream, and uncooked pasta. Bring to a boil, then reduce the heat and simmer until the pasta is cooked.
  4. Mix in the Parmesan and mozzarella cheese until the sauce is creamy and smooth.
  5. Serve warm, garnished with fresh parsley if desired.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat by warming in a pot over low heat and adding a splash of chicken broth or cream if necessary.
