- 1 lb cooked chicken, shredded or diced
- 12 oz penne or rotini pasta
- 2 cups chicken broth
- 1 cup heavy cream
- 2 tbsp Cajun seasoning
- 1/2 cup grated Parmesan cheese
- 1/2 cup shredded mozzarella cheese
- 3 cloves garlic, minced
- 1 tbsp olive oil or butter
Instructions
- Heat the olive oil or butter in a large pot over medium heat. Add the minced garlic and cook until fragrant.
- Stir in the cooked chicken, Cajun seasoning, salt, and pepper; cook until heated through.
- Pour in the chicken broth, heavy cream, and uncooked pasta. Bring to a boil, then reduce the heat and simmer until the pasta is cooked.
- Mix in the Parmesan and mozzarella cheese until the sauce is creamy and smooth.
- Serve warm, garnished with fresh parsley if desired.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat by warming in a pot over low heat and adding a splash of chicken broth or cream if necessary.
