  • ¾–1 cup chopped salted peanuts

Instructions

  1. Line a large baking sheet with parchment paper and arrange Ritz crackers in a single layer.
  2. Melt the butter completely in a medium saucepan over medium heat.
  3. Stir in brown sugar and corn syrup, mixing well until smooth. Bring to a gentle boil and cook while stirring constantly.
  4. Remove the caramel from heat and stir in vanilla extract until glossy and fragrant.
  5. Spoon about 1 tablespoon of hot caramel onto each cracker and gently spread to the edges.
  6. Immediately sprinkle chopped peanuts over the caramel while it is still warm so they stick perfectly.
  7. Let the crackers cool completely at room temperature until the caramel is firm and shiny.

Notes
