Ingredients

  • 4 cups sliced peaches
  • ½ cup sugar
  • 1 tsp cinnamon
  • 1 tsp lemon juice
  • ½ cup butter
  • 1 cup flour
  • 1 cup sugar
  • 1 tbsp baking powder
  • ¼ tsp salt
  • 1 cup milk
  • ½ tsp vanilla

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Melt the butter in a cast iron skillet.
  3. In a bowl, mix the sliced peaches, ½ cup sugar, cinnamon, and lemon juice.
  4. In another bowl, whisk together the flour, 1 cup sugar, baking powder, salt, milk, and vanilla until smooth.
  5. Pour the batter over the melted butter in the skillet. Do not stir.
  6. Spoon the peach mixture on top of the batter.
  7. Bake for 40 to 45 minutes until golden and bubbling.
  8. Allow it to cool for 10 minutes before serving.

Notes

For best results, use fresh, ripe peaches or you can substitute with canned or frozen peaches if out of season. Consider adding a pinch of nutmeg or ginger for extra flavor.
