Instructions
- Preheat your oven to 350°F (175°C).
- Mix the all-purpose flour, baking soda, and salt in a bowl. Set this mixture aside.
- Cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the egg and vanilla extract to the butter mixture.
- Gradually add the flour mixture to the wet ingredients, mixing until just combined.
- Fold in the chocolate chips.
- Beat the softened cream cheese, powdered sugar, and vanilla extract together until smooth for the cheesecake filling.
- Take a small scoop of cookie dough and flatten it in your hand.
- Add a small spoonful of the cheesecake filling in the center, then cover the filling with more cookie dough and shape it into a ball.
- Place the cookie balls on a baking sheet lined with parchment paper, spaced about 2 inches apart.
- Bake for 10-12 minutes, until the edges are golden.
- Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack.
Notes
For best flavor and texture, ensure your cream cheese is very soft. Consider experimenting with different chocolate chip flavors.
