Ingredients

  • 1 pound ground beef (80/20 blend)
  • 1 teaspoon kosher salt
  • 0.5 teaspoon freshly ground black pepper
  • 1 teaspoon garlic powder
  • 4 large flour tortillas (810 inches each)
  • 8 slices sharp cheddar cheese
  • 4 slices American cheese
  • 1 small yellow onion, thinly sliced
  • 2 tablespoons vegetable oil, divided
  • 2 tablespoons unsalted butter, melted
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • Optional Garnishes: Sliced pickles, Chopped fresh cilantro, Salsa, Sour cream

Instructions

  1. Mix the ground beef with kosher salt, black pepper, and garlic powder until just combined.
  2. Preheat a flat griddle or heavy skillet over medium-high heat and add 1 tablespoon of vegetable oil.
  3. Add the sliced onions to one side of the griddle and cook until golden, about 5 minutes.
  4. Transfer the onions to a plate and set aside.
  5. Divide the beef mixture into 8 portions and roll each into a loose ball.
  6. Place 4 beef balls onto the griddle and flatten each to form patties.
  7. Cook the patties until edges are browned, around 2 minutes, then season with salt and pepper.
  8. Flip the patties, add cheeses, and cook until melted, about 1 more minute.
  9. Wipe the griddle clean and reduce heat to medium.
  10. Brush tortilla sides with melted butter and place one on the griddle.
  11. Layer 2 patties, onions, and drizzle with sauce, then top with another tortilla.
  12. Cook until golden, about 2 minutes, then flip and cook the other side.
  13. Transfer to a cutting board, let rest for 1 minute, then slice into wedges.
  14. Repeat with remaining ingredients for a total of 2 quesadillas.

Notes

Serve warm with optional garnishes like pickles, salsa, or sour cream. Can be stored in an airtight container in the refrigerator for up to 2 days.
