- 4 chicken thighs
- 2 tablespoons chipotle sauce
- 2 tablespoons honey
- 2 tablespoons olive oil
- Salt and pepper to taste
- 2 cups potatoes, peeled and diced
- 1/2 cup smoked Gouda cheese, shredded
- 1/4 cup milk
- 2 tablespoons butter
- Fresh herbs for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- Mix the chipotle sauce, honey, olive oil, salt, and pepper in a bowl.
- Coat the chicken thighs in the mixture and place them in a baking dish.
- Bake for 30-35 minutes, or until the chicken is cooked through.
- Boil the potatoes in salted water until tender.
- Drain the potatoes and return them to the pot.
- Add smoked Gouda, milk, and butter to the potatoes; mash until creamy.
- Serve the chicken on a bed of mashed potatoes, garnished with fresh herbs.
Notes
For extra flavor, marinate the chicken for a few hours. You can adjust the spiciness by altering the amount of chipotle sauce.
