- 2 cups chocolate chip cookies, crushed
- 1/2 cup unsalted butter, melted
- 1 quart vanilla ice cream, softened
- 1 quart chocolate ice cream, softened
- 1 cup whipped cream
- Chocolate syrup (for drizzling)
- Chocolate chips (for garnish)
Instructions
- In a medium bowl, mix the crushed chocolate chip cookies with melted butter until fully combined. Press the mixture into the bottom of a 9-inch springform pan to create a crust.
- Layer the softened vanilla ice cream over the cookie crust, spreading it evenly. Freeze for 30 minutes to set.
- Next, layer the softened chocolate ice cream over the vanilla ice cream, smoothing it down. Freeze for another 30 minutes.
- Once set, spread the whipped cream evenly on top of the chocolate layer.
- Drizzle chocolate syrup over the whipped cream and sprinkle with chocolate chips for garnish.
- Freeze the cake for at least 120 minutes or until firm.
- To serve, remove from the springform pan, slice, and enjoy your delicious dessert!
