  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1 cup cream cheese, softened
  • 1 cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix the flour, baking soda, and salt together in a bowl.
  3. Combine the softened butter, brown sugar, and granulated sugar until smooth in another bowl.
  4. Beat in the egg and vanilla extract.
  5. Gradually add the flour mixture into the wet ingredients and mix well.
  6. Beat the cream cheese, powdered sugar, and cinnamon until smooth in a separate mixing bowl.
  7. Scoop a tablespoon of cookie dough and flatten it in your hand.
  8. Place about a teaspoon of cheesecake filling in the center and wrap the cookie dough around it.
  9. Bake for 10-12 minutes until golden.
  10. Let the cookies cool on a wire rack before serving.
