- 3 cups tri-color rotini pasta
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1 cup bell pepper, diced
- 1/2 cup red onion, diced
- 1 cup mozzarella cheese, cubed
- 1/2 cup black olives, sliced
- 1/2 cup Italian dressing or homemade vinaigrette
- Salt and pepper to taste
Instructions
- Cook the tri-color rotini pasta according to package instructions. Drain and rinse under cold water.
- In a large bowl, combine the cooked pasta, cherry tomatoes, cucumber, bell pepper, red onion, mozzarella cheese, and black olives.
- Pour the Italian dressing or homemade vinaigrette over the salad. Toss to combine.
- Season with salt and pepper to taste.
- Cover and refrigerate for at least 30 minutes before serving to allow the flavors to meld.
