- 1 cup all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/4 cup powdered sugar
- 1/4 teaspoon salt
- 2 cups chopped rhubarb
- 1 cup granulated sugar
- 1/4 cup cornstarch
- 1/2 teaspoon vanilla extract
- 4 large eggs
- 1 cup heavy cream
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×9-inch baking pan.
- Combine flour, butter, powdered sugar, and salt to form a crumbly dough. Press the mixture into the bottom of the prepared pan.
- Mix chopped rhubarb, granulated sugar, cornstarch, and vanilla. Spread the rhubarb mixture over the crust.
- Whisk together eggs and heavy cream. Pour the egg mixture over the rhubarb layer.
- Bake for 35-40 minutes or until the custard is set and the top is slightly golden.
- Allow to cool completely before cutting into bars. Serve chilled or at room temperature.
Notes
These bars can be served as they are or dusted with powdered sugar. They pair perfectly with vanilla ice cream or whipped cream.
