Instructions
- Season the chicken by combining chicken cubes with garlic powder, onion powder, and olive oil in a bowl.
- Cook the seasoned chicken in a skillet over medium heat for about 7-10 minutes until fully cooked and lightly browned.
- Prepare sweet potatoes by roasting them in the oven at 400°F (200°C) for 25-30 minutes or until tender if not already roasted.
- Mix the dressing in a small bowl by combining Greek yogurt, lime juice, sriracha, cumin, and paprika until smooth.
- Assemble the bowls by layering cooked rice, followed by chicken, roasted sweet potatoes, and seasonal vegetables. Drizzle the dressing on top.
- Garnish each bowl with fresh cilantro or parsley for added flavor.
Notes
