- 1 cup liquid egg whites (or about 8 large egg whites)
- 1/2 cup low-fat cottage cheese
- 1/4 cup finely chopped red bell pepper
- 2 tablespoons finely chopped green onion
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 1/4 teaspoon garlic powder
- Nonstick cooking spray
Instructions
- Preheat your oven to 350°F (175°C). Spray a 12-cup nonstick muffin tin with nonstick cooking spray.
- Whisk together the egg whites, cottage cheese, salt, pepper, and garlic powder in a medium bowl until frothy.
- Fold in the finely chopped red bell pepper and green onion.
- Pour the mixture evenly into the muffin cups, filling each about three-quarters full.
- Bake in the preheated oven for about 18-20 minutes, or until the tops are firm and a toothpick inserted into the center comes out clean.
- Allow the bites to cool in the pan for 5 minutes. Then, run a spatula around the edges to release them. Serve warm.
Notes
Best served warm but can also be enjoyed cold. Can substitute different vegetables or cheeses as desired.
