- 4 tablespoons olive oil
- 1 medium onion (chopped)
- 3 cloves garlic (minced)
- ¼ cup flour
- 2 cups milk
- 2 cups chicken broth
- 4 cups chopped broccoli florets
- 2 cups cheddar cheese
- ½ cup heavy cream
- Salt and pepper to taste
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onions and minced garlic. Cook for 5-6 minutes until they soften.
- Stir in the flour and mix well.
- Whisking constantly, gradually pour in the milk.
- Add the chicken broth and chopped broccoli florets.
- Bring the mixture to a boil, then reduce to a simmer. Cook for 8-10 minutes until the broccoli is tender.
- Stir in the cheddar cheese and then the heavy cream.
- Taste and add salt and pepper as needed. Enjoy!
Notes
Serve hot with extra cheese, croutons, or a sprinkle of pepper. Pairs well with crusty bread or a fresh salad.
