- 1 pound ground beef
- 2 medium zucchinis, sliced
- 1 cup shredded cheese (cheddar or mozzarella)
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can diced tomatoes (optional)
- Salt and pepper to taste
- 1 teaspoon Italian seasoning
- Olive oil for cooking
Instructions
- Preheat the oven to 350°F (175°C).
- Heat olive oil in a large skillet over medium heat. Add chopped onion and garlic, and sauté until the onion is translucent.
- Add ground beef to the skillet, cooking until browned. Drain excess fat.
- Stir in sliced zucchini and cook for about 5 minutes until slightly softened.
- Season with salt, pepper, and Italian seasoning. If using, add diced tomatoes and mix well.
- Layer the beef and zucchini mixture in a baking dish. Top with shredded cheese.
- Bake in the preheated oven for about 20-25 minutes, or until the cheese is bubbly and golden.
- Let it cool slightly before serving.
Notes
Use lean ground beef to reduce fat content. Feel free to add other vegetables, like bell peppers or spinach, for extra nutrition. For a low-carb option, substitute ground beef with ground turkey or chicken and zucchini with cauliflower.
