Ingredients

  • 1 tbsp olive oil
  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • Salt and pepper, to taste
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 3 cups corn kernels
  • 2 cups diced potatoes
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 tsp dried thyme
  • 1 tsp smoked paprika
  • 1/2 tsp cayenne pepper, optional
  • 2 cups half-and-half or heavy cream
  • 2 tbsp cornstarch, mixed with 2 tbsp cold water
  • 4 slices bacon, cooked and crumbled
  • 2 green onions, chopped
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Warm the olive oil in a large pot over medium-high heat. Add the seasoned chicken pieces and sauté until golden brown and cooked through, about 6-8 minutes. Remove and set aside.
  2. Cook the diced onion and minced garlic in the same pot until the onion is translucent, approximately 3-4 minutes.
  3. Pour in the chicken broth, then stir in the corn, diced potatoes, carrots, celery, dried thyme, smoked paprika, and cayenne pepper. Combine well and bring to a gentle simmer.
  4. Cover the pot and let the chowder cook for about 20 minutes.
  5. Stir the cooked chicken back into the pot.
  6. Gently stir in the half-and-half or heavy cream and return the chowder to a gentle simmer.
  7. Mix the cornstarch with cold water to make a slurry, then add it to the pot. Continuously stir until the chowder thickens, about 3-5 minutes.
  8. Taste the chowder and adjust with additional salt and pepper.
  9. Ladle the chowder into bowls and top with crumbled bacon, green onions, and parsley.

Notes

Serve with warm, crusty bread or a simple side salad for a complete meal. For a vegetarian version, replace chicken with mushrooms or chickpeas and use vegetable broth.
