- 1 tbsp olive oil
- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- Salt and pepper, to taste
- 1 onion, diced
- 2 cloves garlic, minced
- 2 cups chicken broth
- 3 cups corn kernels
- 2 cups diced potatoes
- 1 cup diced carrots
- 1 cup diced celery
- 1 tsp dried thyme
- 1 tsp smoked paprika
- 1/2 tsp cayenne pepper, optional
- 2 cups half-and-half or heavy cream
- 2 tbsp cornstarch, mixed with 2 tbsp cold water
- 4 slices bacon, cooked and crumbled
- 2 green onions, chopped
- 1/4 cup fresh parsley, chopped
Instructions
- Warm the olive oil in a large pot over medium-high heat. Add the seasoned chicken pieces and sauté until golden brown and cooked through, about 6-8 minutes. Remove and set aside.
- Cook the diced onion and minced garlic in the same pot until the onion is translucent, approximately 3-4 minutes.
- Pour in the chicken broth, then stir in the corn, diced potatoes, carrots, celery, dried thyme, smoked paprika, and cayenne pepper. Combine well and bring to a gentle simmer.
- Cover the pot and let the chowder cook for about 20 minutes.
- Stir the cooked chicken back into the pot.
- Gently stir in the half-and-half or heavy cream and return the chowder to a gentle simmer.
- Mix the cornstarch with cold water to make a slurry, then add it to the pot. Continuously stir until the chowder thickens, about 3-5 minutes.
- Taste the chowder and adjust with additional salt and pepper.
- Ladle the chowder into bowls and top with crumbled bacon, green onions, and parsley.
Notes
Serve with warm, crusty bread or a simple side salad for a complete meal. For a vegetarian version, replace chicken with mushrooms or chickpeas and use vegetable broth.
