- 1 pound chicken breast
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 2 cups green chiles, chopped
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 1 cup corn (optional)
- Fresh cilantro for garnish
Instructions
- Sauté onion and garlic until translucent.
- Add the chicken breast and cook until browned.
- Pour in the chicken broth, green chiles, cumin, smoked paprika, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 25 minutes.
- Remove the chicken, shred it, and return to the pot.
- Stir in corn if using, and heat through.
- Serve hot, garnished with fresh cilantro.
Notes
For extra richness, add a splash of heavy cream or sour cream. Adjust spice level with hotter green chiles or red pepper flakes. Other vegetables like bell peppers or zucchini can be added for more nutrition.
