- 2 chicken breasts
- 1 cup of spinach, chopped
- 1/2 cup of cream cheese
- 1/4 cup of grated parmesan cheese
- 1 clove of garlic, minced
- Salt and pepper to taste
- Olive oil for searing
- Toothpicks or kitchen twine
Instructions
- Preheat the oven to 375°F (190°C).
- Mix together the spinach, cream cheese, parmesan cheese, minced garlic, salt, and pepper in a bowl.
- Carefully slice a pocket into each chicken breast.
- Stuff each pocket with the spinach mixture and secure with toothpicks or kitchen twine.
- Heat olive oil in a skillet over medium-high heat.
- Sear the stuffed chicken breasts on each side until golden brown, about 4-5 minutes per side.
- Transfer the chicken to a baking dish and bake in the preheated oven for 25-30 minutes or until the chicken is cooked through.
- Let rest for a few minutes before slicing and serving.
Notes
For a crispy skin, bake the chicken without covering it with foil. You can add ingredients like sun-dried tomatoes or mozzarella cheese for different flavors.
