Ingredients
Scale
- 3 to 4 pounds beef roast (such as chuck or round)
- 1 cup cranberry sauce
- 1/2 cup balsamic vinegar
- 1/2 cup beef broth
- 1 onion, chopped
- 3 cloves garlic, minced
- Salt and pepper to taste
- Fresh rosemary or thyme for garnish (optional)
Instructions
- Preheat the oven to 325°F (163°C).
- Mix together the cranberry sauce, balsamic vinegar, and beef broth in a large bowl.
- Season the beef roast with salt and pepper, and place it in a roasting pan.
- Pour the cranberry balsamic mixture over the roast, scattering the chopped onion and minced garlic around it.
- Cover the pan with foil and roast in the oven for about 180-240 minutes, or until the beef is tender and easily shreds with a fork.
- Let the roast rest for 10-15 minutes before slicing.
- Serve hot, drizzled with the cooking juices and garnished with fresh herbs if desired.
Notes
Choose a good-quality cut of meat for the best flavor and tenderness. Let the roast sit out of the refrigerator for about 30 minutes before cooking to ensure even cooking.
