- 1 pound chicken breast
- 1 cup orzo pasta
- 2 cups mixed vegetables (e.g., carrots, peas)
- 4 cups chicken broth
- 1 cup heavy cream
- 1 teaspoon dried thyme
- Salt to taste
- Pepper to taste
Instructions
- Melt the butter in a large pot over medium heat. Add the chicken breast and cook until browned and cooked through. Remove the chicken from the pot and set it aside.
- Add your mixed vegetables in the same pot and cook for about 5 minutes until they soften.
- Return the cooked chicken to the pot and add the orzo pasta and chicken broth. Stir to combine.
- Bring the mixture to a boil, then reduce the heat. Let it simmer for about 10-12 minutes until the orzo is al dente.
- Stir in the heavy cream, dried thyme, salt, and pepper. Mix well and cook for an additional 2-3 minutes. Adjust seasoning if needed.
Notes
For a vegetarian option, substitute chicken with chickpeas and use vegetable broth.
