- 1 pound fresh fish (like cod or haddock), cut into chunks
- 4 slices bacon, chopped
- 1 onion, diced
- 2 cups potatoes, peeled and cubed
- 2 cups fish stock or vegetable broth
- 1 cup heavy cream
- 1 cup corn (fresh or frozen)
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Cook the chopped bacon over medium heat until crispy.
- Add the diced onion and sauté until translucent.
- Stir in the cubed potatoes and cook for a few minutes.
- Pour in the fish stock or broth and bring to a boil. Reduce heat and simmer until the potatoes are tender.
- Add the chunks of fish and corn to the pot, cooking until the fish is opaque and cooked through.
- Stir in the heavy cream and season with salt and pepper.
- Simmer for another 5 minutes.
- Serve hot, garnished with fresh parsley.
Notes
For best flavor, use fresh fish. You can also customize the chowder with different vegetables or seafood variations.
