Ingredients

  • 1 tbsp olive oil
  • 1 cup onion, diced
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 1 can (4 oz) diced green chilies
  • 2 cups beef broth
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup green onions, chopped

Instructions

  1. Pour olive oil into a large pot and heat over medium heat until shimmering.
  2. Add ground beef, cooking until browned and sizzling, about 5-7 minutes.
  3. Stir in the diced onion and minced garlic, cooking until softened and fragrant, around 3-4 minutes.
  4. Mix in diced tomatoes, green chilies, beef broth, chili powder, cumin, and paprika. Bring to a gentle simmer.
  5. Reduce heat and stir in heavy cream until well combined and warmed through, about 2-3 minutes.
  6. Remove from heat; fold in shredded cheddar cheese and sour cream until melted and creamy.
  7. Ladle into bowls and top with fresh chopped green onions for a pop of color and crunch.

Notes
