- 1 lb ground beef
- 1 tbsp olive oil
- 1 cup onion, diced
- 2 cloves garlic, minced
- 1 can (14 oz) diced tomatoes
- 1 can (4 oz) diced green chilies
- 2 cups beef broth
- 1 tsp chili powder
- 1 tsp cumin
- 1 tsp paprika
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup green onions, chopped
Instructions
- Pour olive oil into a large pot and heat over medium heat until shimmering.
- Add ground beef, cooking until browned and sizzling, about 5-7 minutes.
- Stir in the diced onion and minced garlic, cooking until softened and fragrant, around 3-4 minutes.
- Mix in diced tomatoes, green chilies, beef broth, chili powder, cumin, and paprika. Bring to a gentle simmer.
- Reduce heat and stir in heavy cream until well combined and warmed through, about 2-3 minutes.
- Remove from heat; fold in shredded cheddar cheese and sour cream until melted and creamy.
- Ladle into bowls and top with fresh chopped green onions for a pop of color and crunch.
Notes
Great for meal prep and leftovers. Can be made spicy by adding cayenne pepper or more green chilies.
