- 1 lb Italian sausage
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tsp Italian seasoning
- 1/2 tsp paprika
- 1/4 tsp red pepper flakes (optional)

- 4 cups chicken broth
- 1 can (14.5 oz) diced tomatoes, drained
- 1 cup heavy cream
- 1 package (9 oz) cheese tortellini
- 2 cups fresh spinach, roughly chopped

- 1/4 cup grated Parmesan cheese (for serving)
Instructions
- Heat 1 tablespoon of olive oil in a large pot over medium heat. Add 1 pound of crumbled Italian sausage, cooking until it’s browned and no longer pink, about 5-7 minutes.
- Stir in 1 small diced onion and cook for 3-5 minutes until softened. Add 2 minced garlic cloves, 1 teaspoon Italian seasoning, 1/2 teaspoon paprika, and optional 1/4 teaspoon red pepper flakes, cooking 30 seconds until fragrant.
- Sprinkle 3 tablespoons of all-purpose flour over the sausage mixture. Stir well to coat everything evenly and cook for 1 minute.
- Gradually add 4 cups of chicken broth while stirring continuously to avoid lumps. Toss in 1 can of drained diced tomatoes, bringing the soup to a gentle simmer.
- Stir in 1 cup of heavy cream and then add 9 ounces of refrigerated cheese tortellini. Let the soup simmer for 7-9 minutes until the tortellini is tender and cooked through.
- Gently fold in 2 cups of roughly chopped fresh spinach, cooking until just wilted, about 1-2 minutes. Season with salt and black pepper to taste.
- Ladle the hot soup into bowls and sprinkle each serving with 1/4 cup of grated Parmesan cheese. Enjoy immediately for the best flavor!
Notes
For a vegetarian version, substitute sausage with plant-based options and use a different type of pasta if desired.
