  • 1/4 cup olive oil
  • Salt, to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the chicken breasts horizontally into two thinner pieces.
  3. In a mixing bowl, combine cottage cheese, spinach, artichokes, garlic, parmesan, salt, and pepper; mix well.
  4. Place the sliced chicken in a baking dish and generously spoon the filling over each piece.
  5. Drizzle olive oil over the assembled chicken.
  6. Bake for about 25 minutes or until the chicken is cooked through (165°F internal temperature).
