- 2 large chicken breasts
- 1/2 cup cottage cheese
- 1/4 cup fresh spinach, chopped
- 1/2 cup artichoke hearts, drained and chopped
- 2 cloves garlic, minced
- 1/4 cup parmesan cheese, grated
- 1/4 cup olive oil
- Salt, to taste
- Pepper, to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Slice the chicken breasts horizontally into two thinner pieces.
- In a mixing bowl, combine cottage cheese, spinach, artichokes, garlic, parmesan, salt, and pepper; mix well.
- Place the sliced chicken in a baking dish and generously spoon the filling over each piece.
- Drizzle olive oil over the assembled chicken.
- Bake for about 25 minutes or until the chicken is cooked through (165°F internal temperature).
Notes
For best flavor, use fresh spinach over frozen. Adjust spices to your preference.
