- 1 lb chicken breast, diced
- 1 cup orzo pasta
- 2 cups fresh spinach
- 1 cup mushrooms, sliced
- 1 cup heavy cream
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
- Grated Parmesan cheese for serving
Instructions
- In a large pot, heat olive oil over medium heat. Add chicken and cook until browned.
- Add garlic and mushrooms; sauté until mushrooms are tender.
- Stir in the orzo and pour in enough water or chicken broth to cover. Cook according to package instructions.
- When orzo is nearly cooked, stir in the fresh spinach and heavy cream.
- Cook until the spinach is wilted and the orzo is creamy.
- Season with salt and pepper, and serve with grated Parmesan cheese.
Notes
Use freshly minced garlic for the best flavor. You can substitute heavy cream with half-and-half for a lighter version. Add extra vegetables for added nutrition and color. Ensure orzo is al dente for best texture.
