Ingredients

- 3 Garlic cloves
- 2 cups Mushrooms
- 3 cups Spinach, fresh
- 3 tbsp All-purpose flour
- 1/2 tsp Nutmeg, ground
- 2 Salt and pepper to taste
- 2 tbsp Olive oil
- 3 tbsp Butter
- 3 cups Milk
- 2 cups Mozzarella cheese
- 1/2 cup Parmesan cheese, grated
- 1 cup Ricotta cheese
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat. Add garlic and mushrooms; sauté until mushrooms are tender.
- Add spinach and cook until wilted.
- In a separate saucepan, melt butter and whisk in flour. Gradually add milk, stirring continuously until thickened. Season with nutmeg, salt, and pepper.
- In a large baking dish, layer the ingredients: start with a layer of the mushroom and spinach mixture, followed by a layer of the cheese mixture (mix ricotta, mozzarella, and Parmesan), then repeat until all ingredients are used, finishing with cheese on top.
- Cover with foil and bake for 25 minutes. Then, remove the foil and bake for an additional 15 minutes until bubbly and golden.
- Let it sit for 10 minutes before serving. Enjoy your lasagna!
Notes
Use fresh spinach for the best flavor and texture. Feel free to mix in other vegetables like zucchini or bell peppers for added nutrition.
