- 3 large russet potatoes, cut into one-inch cubes
- 2 tablespoons olive oil
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon paprika

- 1 tablespoon chopped parsley
Instructions
- Wash and cube potatoes into even one-inch pieces.
- Soak in cold water for 10 minutes, then drain and dry thoroughly.
- Toss potatoes with olive oil, salt, pepper, garlic powder, paprika, and onion powder.
- Preheat air fryer to 400 degrees Fahrenheit.
- Arrange potatoes in a single layer in the basket.
- Cook for 12 minutes, shake the basket, then cook another 10 to 12 minutes until golden and crisp.
- Check tenderness with a fork and cook 2 to 3 minutes longer if needed.
- Transfer to a bowl, sprinkle with parsley, and serve immediately.
Notes
Serve with dipping sauces or as a side dish with grilled meats. Store leftovers in an airtight container for up to three days.
