Instructions

  1. Preheat the oven to 350°F (175°C) and line a large baking sheet with parchment paper.
  2. Drain the cottage cheese in a fine-mesh sieve and pat dry with paper towels.
  3. Combine the drained cottage cheese with garlic powder, onion powder, smoked paprika, black pepper, and salt in a mixing bowl.
  4. Spoon tablespoon-sized portions onto the baking sheet, spacing them 2 inches apart, and flatten each mound.
  5. Sprinkle chopped chives or grated Parmesan cheese over each chip if desired.
  6. Bake for 30 to 35 minutes until the edges are golden brown and the chips are crispy.
  7. Cool the chips completely on the baking sheet.
  8. Remove the chips carefully and serve immediately or store in an airtight container for up to 2 days.
