Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. Combine the flour, oats, baking soda, cinnamon, nutmeg, and salt in another bowl. Gradually add this dry mixture to the wet ingredients, mixing until just combined.
  5. Fold in the chopped apples gently.
  6. Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes, or until the edges are lightly golden.
  8. Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
