Delicious roasted plantains marinated in a vibrant mojo sauce made with citrus and garlic, perfect as a side or snack.

Ingredients

  • 2 ripe plantains
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/4 cup fresh orange juice
  • 2 tablespoons fresh lime juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • Fresh cilantro for garnish (optional)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Peel the ripe plantains and cut them into 1-inch thick slices.
  3. Mix olive oil, minced garlic, orange juice, lime juice, salt, and pepper to create the mojo marinade.
  4. Toss the plantain slices in the mojo marinade until well coated.
  5. Spread the plantains on a baking sheet lined with parchment paper.
  6. Roast in the preheated oven for about 20-25 minutes, flipping them halfway through, until golden brown and caramelized.
  7. Remove from the oven and garnish with fresh cilantro if desired. Serve warm.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat at 350°F (175°C) for about 10 minutes.
