- 2 ripe plantains
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1/4 cup fresh orange juice
- 2 tablespoons fresh lime juice
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- Fresh cilantro for garnish (optional)
Instructions
- Preheat the oven to 425°F (220°C).
- Peel the ripe plantains and cut them into 1-inch thick slices.
- Mix olive oil, minced garlic, orange juice, lime juice, salt, and pepper to create the mojo marinade.
- Toss the plantain slices in the mojo marinade until well coated.
- Spread the plantains on a baking sheet lined with parchment paper.
- Roast in the preheated oven for about 20-25 minutes, flipping them halfway through, until golden brown and caramelized.
- Remove from the oven and garnish with fresh cilantro if desired. Serve warm.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat at 350°F (175°C) for about 10 minutes.
