Ingredients

  • 1.5 cups Powdered Sugar
  • 1 cup Almond Flour
  • 3 large Egg Whites
  • 0.25 teaspoon Cream of Tartar
  • 0.75 cups Granulated Sugar
  • A few drops Green Gel Food Coloring
  • 0.5 cups Unsalted Butter
  • 1 cup Powdered Sugar (for filling)
  • 1 tablespoon Vanilla Extract
  • 2 tablespoons Heavy Cream
  • 1 cup Snack Cakes (crumbled)

Instructions

  1. Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. Mix the powdered sugar and almond flour together and sift to ensure it’s smooth.
  3. Beat the egg whites with cream of tartar until soft peaks form. Gradually add the granulated sugar until stiff peaks are achieved.
  4. Add a few drops of green gel food coloring to the egg whites and gently fold in the almond flour mixture.
  5. Transfer the mixture to a piping bag and pipe small circles onto the prepared baking sheet.
  6. Let the macarons sit at room temperature for about 30 minutes to form a skin.
  7. Bake the macarons for about 15-20 minutes. Allow them to cool completely.
  8. Beat the unsalted butter until creamy, then gradually add powdered sugar, vanilla extract, and heavy cream. Mix until smooth.
  9. Fold in the crumbled snack cakes until combined.
  10. Pipe the filling onto half of the macarons and sandwich with the other half.

Notes

Ensure mixing bowls and utensils are clean and dry when whipping egg whites. Be patient during the drying time before baking.
