Ingredients

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup dulce de leche
  • 1/2 cup sugar (for coating)
  • 1 tablespoon cinnamon (for coating)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Whisk together the flour, sugar, baking powder, and salt in a large bowl.
  3. Combine the melted butter, milk, eggs, and vanilla extract in another bowl. Mix until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Fill each muffin cup halfway, then add about a tablespoon of dulce de leche in the center of each. Top with more muffin batter until almost full.
  6. Bake for 18-20 minutes or until a toothpick comes out clean.
  7. Mix sugar and cinnamon in a bowl while muffins cool.
  8. Brush the warm muffins with melted butter and roll them in the cinnamon sugar mixture.
  9. Serve warm.
